Can this be done? I'm being told no, but, was also told that Avaya 9 and 9.5 wouldn't work with 5.1 unfortunately Avaya is only shipping 10. Any feedback on 5.1 w/ 10 would be great.

If Genesys does not support it, I would suggest to forego it, because even if you can get it to work, when something goes wrong, you would be all on your own. And it is usually a not good thing.
You can probably downgrade the link software to release 8 and get it to work with 5.1, but is it worth all the pain?
G6.5 should be supporting 9.5, thus it should be fine with 10 as well.... What are you trying to do? Are you upgrading your PBX?

We are using Genesys 5.1.5 on production with Avaya 9.5 and it's working fine since 4 months for 200+ positions.Genesys and Avaya supports have both validated that configuration, The ACD version and the Asai version are 2 different things and upgrading the ACD to 9.5 or more does not mean so much for genesys TServer as soon as the Asai version is supported.
