Does anyone have sample documentation for setting up a test lab or have suggestions on how to go about it.

Very good question I was wondering about it myself more than once.
Could you please be more specific?
Test lab for what kind of environment? What products will you be using? Is it going to be G5 or G6? Will you use IVR? What are your objectives?

I am sure we all could pitch in to help you with getting it right. :)
